Have you ever heated up an uncovered – but microwave-safe! – dish of refried beans in the old zapper? I knew better. But I was in a hurry. Not only that but I forgot to stop what I was doing and clean it up right then. Wished I’d had an Angry-Mama Microwave Cleaner the next day back then. NewMetro Design’s little help-mate is a natural powerhouse: Add water and vinegar and – if you’d like – a bit of scent (we use lemon) to Angry-Mama and run it through a 7-minute cycle and the old zapper wipes clean in a breeze. A clean scented breeze!

We’re using more and more herbs in our cooking and there are a number of reasons. The biggest reason is no doubt flavor from natural sources instead of the laboratory as many food manufacturers and restaurants are finding out. Lately we’ve seen an increase in articles about the health benefits of herbs such as the Arizona Republic’s Karen Fernau recent article. A real handy herb “assistant” is Trudeau’s Adagio Green Herb Mill, a 7 1/2″ little tower of strength. It has larger ceramic grinding mechanism designed for dry herbs and spices. In classic French cuisine one of the duties of the garde manger (keeper of the food) – and still a site to behold at our resort Sunday brunches – are beautifully worked vegetables, fruits – and those cool ice sculptures. Microplane has designed a handy garde manger tool to prepare fresh vegetables for your salads, wok dishes and hors-d’oeuvre platters called a Spiral Cutter that produces handsome and easier-to-eat spirals of carrots, zucchini, cucumbers & daikon radishes. (All these have become very popular as satisfying “sphaghetti” for gluten-feee meals.) There are two sizes in each Spiral Cutter: large for zucchini and smaller for carrots. The Staybowlizer is one of those “Why didn’t I think of that!” tools. We’ve all struggled with heating chocolate in a double boiler or mixing and/or whisking anything at all on a counter. If you use the Staybowlizer with the wider side facing down, you can evenly press your bowl down on the Staybowlizer to create a suction-lock! (3rd photo) No more bowl-dances-with-counter. Take the easy road to peeled garlic and keep your garlic moist while roasting with these garlic tools. 1) The Messermeister Pro-Touch Jumbo Garlic Press presents a convenient alternative to mincing garlic with a knife. It presses 2-4 garlic cloves at once for efficiency. “Mise en place” (as we describe in our Blog: “Bring Out Your Inner Felix“) is “setting in place” the ingredients and tools you will use in a recipe. Sweet Basil has some handy tools for this. NORPRO silicone Mini Pinch Bowls hold 1.75oz and are heat resistant (to 500 degrees) and dishwasher safe. (They are called “Pinch Bowls” because you can “pinch” the bowl and pour from these silicone bowls.)
Kuchenprofi Skimmer & Better Than Bouillon Chicken Base TIME…WHO HAS IT?
In The Arizona Republic Food & Dining there was a wonderful article about making chicken stock from scratch & 2 recipes: one for stock and one for an Asian soup. (Go here for an online copy.) It is by Sara Moulton of Gourmet & FoodTV fame. I got a kick out of it because she mentions one of my “essential” gadgets – a skimmer – which really helps when your making stock. If you can find some time – maybe a few hours on a weekend – you should. But if you can’t, we carry Better Than Bouillon’s top notch Chicken Base. If you do find the time – we carry a variety of skimmers like my favorite, a stainess steel beauty from Kuchenprofi. (It’s great for pasta, too.)
If you are like a dear friend of ours – whom we fondly call “Asbestos Mouth” – or your idea of heaven is the fiery sauce at Los “Sorry we do not provide a mild sauce….” Dos Molinos or if you react like Count Dracula to garlic, stop reading now. On the other hand, if you like a thick sauce with deep, rich pepper and garlic flavors you should try Pepper Plants Chunky Garlic Hot Pepper Sauce made in the Garlic Capital of the World – Gilroy, California. It is just a smidge or two past mild. A little goes along way and it is great in dips, in mayo for sanwiches – and anywhere else you are looking for a flavor boost. WARNING: It is addicitve.
