Our lesson is Salmon Rillettes (light but rich tasting Spread made with fresh & Smoked Salmon, Butter, & fresh Herbs, served over Crackers & Cucumber slices; Pissaladièrre (Puff Pastry Tart topped with Caramelized Onions, Olives, & fresh Herbs); Upside Down Mushroom Tartlets; Mini Bacon Quiches; Spinach Soufflé; Potato Galette (Crustless Tart with Potato slices, Butter, & Rosemary), and Sous Vide Chocolate Pots de Crème (Little pots of rich Chocolate Custard).
